While I'm trying some new recipes I have *started* them. Hopefully they will work!
Question: I have 2 cup of shredded zucchini suggestions on what to do with it beside zucchini bread?

Bake this zucchini bread flavored with cinnamon when zucchini are plentiful
from the garden.
Preparation time: 20 min Baking time: 55 min
Yield: 24 servings (2 loaves)
3 cups all-purpose flour
1 tablespoon ground cinnamon
1 teaspoon salt
1 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
2 cups sugar
1 cup LAND O LAKES® Butter, softened
3 eggs
1 tablespoon vanilla
2 medium (2 cups) zucchini, shredded
1/2 cup chopped walnuts
Heat oven to 350°F. Combine flour, cinnamon, salt, baking soda, baking
powder, cloves and nutmeg in large bowl; set aside.
Combine sugar, butter, eggs and vanilla in large mixer bowl. Beat at medium
speed, scraping bowl often, until smooth (2 to 3 minutes). Reduce speed to
low; add flour mixture. Continue beating until well mixed (1 to 2 minutes).
(Mixture will be very thick.) Stir in zucchini and walnuts by hand.
Spread mixture into 2 greased (8x4-inch) loaf pans. Bake for 55 to 65
minutes or until toothpick inserted in center comes out clean. Cool 10
minutes; remove from pans. Cool completely; store refrigerated.
Nutrition Facts (1 serving): Calories: 220, Fat: 10g, Cholesterol: 45mg,
Sodium: 220mg, Carbohydrates: 30g, Dietary Fiber: <1g, Protein: 3g
a lady I met recently told me she made chocolate cake with her excess zucchini! unfortunately I don't have a recipe but she said it was moist and sweet and her family loved it... when I googled "zucchini chocolate cake" a bunch of recipes popped up.
I wonder if you could use the zucchini in a spaghetti sauce? not sure. I'm cooking-challenged. Your menu looks great this week!

I have a great zucchini recipe (sort of pie that) I made once with pink pepper. It´s great. I´ll see if I have time to post it tomorrow!
I've always wanted to try turkey burgers... maybe I'll venture out and give them a try :) It all sounds delish!

Miss Huckleberry- I will post my turkey burgers recipe tomorrow. It took me 12 years to find the perfect turkey burger recipe and for a bonus totally foolproof .

I've done this with eggplant, but think zucchini would also work:
brown up 1 lb of ground turkey or ground beef in a pot, when browned add 1 28 oz can crushed tomato, and 1 cup of shredded zucchini. Boil up 1 lb of rigatoni in water, drain, mix with sauce and put into a baking dish (9x13) top with some mozzarella or italian mix shredded cheese and bake at 350 degrees covered for 25 min, and uncovered for 10 until cheese is bubbly.
